Galápagos Orange & Salt
Using the Italian confiserie technique known as “frutta candita,” To'ak Chocolate cooks orange skins with sugar. The candied oranges are then cut into small cubes, individually covered in cacao butter, and integrated into the chocolate along with salt crystals from Ecuador’s storied Galápagos Islands. Their friends at Galápagos Safari Camp harvest the sea salt and oranges by hand on Santa Cruz Island. Like nature, their ingredients change flavor with the seasons.
