Spicy Tucupí - Alchemy Grande
Tucupí is an essential condiment in Amazonian gastronomy linked to the preparation of cassava (yuca) bread. Tucupí brings a rich, spicy, and umami flavor that can be described as "Amazonian miso.” It is probably unlike anything you will have tasted before.
For millennia, indigenous communities have prepared Tucupí—also called Neapía—in traditional kitchens across the Amazon rainforest. It is made from fermented manioc (cassava) starch and chilies and slowly cooked over a wood fire. The flavor of Tucupí is rich, spicy, and smoky, with an intense umami taste. Tucupí is sourced from the Muruy-Muyna community in the Amazonía region of Colombia.
