Again Fig
Loveday Distillery, Chocolarder's lovely neighbours in Falmouth, use delicious organic oak smoked figs to flavour their spiced rum.
They carefully source organic dried figs, before waiting for a dry day to smoke them with oak just up the road from our factory at their distillery. The figs are then soaked in the rum for at least 2 weeks. With sustainability in mind, Daisy got in touch as she knew it was such a shame to see these figs go to waste and they jumped at the chance.
The first process for them is to remove moisture and alcohol from the figs, they want to leave just the right amount of chew in the fruit. They gently dry the figs, and then break them down before pairing them with 50% Milk Chocolate from Oko Caribe in the Dominican Republic.
This is a story, about food waste, generosity and working together. They're so excited to be adding this limited edition bar to their Again range.
