Simone Sabaini had a successful financial career in Verona before a stint in South America taught him a bit about chocolate. By chance, he discovered Modica in Sicily on holiday and fell in love with the area. He drew upon his finance and trade experience with chocolate to create Sabadi, named for the day when we slow down and reflect on what is important. Modica chocolate is raw, has no cocoa butter added, and has a wonderfully distinctive texture.
